    3. Cover the jar with a cheesecloth or a coffee filter and secure it with a rubber band to allow the mixture to breathe.

    4. Let the jar sit at room temperature (68-85°F) for 24-48 hours, depending on the desired tartness.

    5. Once the milk has thickened and has a tangy aroma, strain the kefir into a clean container using a non-metallic strainer, separating the grains from the liquid.

    6. Store the strained kefir in the refrigerator and start your next batch with the kefir grains.
